Methi Mathri Recipe is a traditional deep-fried snack of flat fritters flavoured with typical Indian spices. It is usually made during the festive season when every household swings into action preparing a host of homemade sweets, desserts and savoury snacks. Mathri is usually savoury and spiced with ajwain amongst other things, but this recipe is for a sweetened mathri. It is essentially a shortcrust pastry like dough, flattened into rounds and deep fried till golden. Then, the mathri is coated with sugar syrup, creating a crunchy, but flaky fritter laced with a hint of sweetness, perfect for the festive celebrations. You can make this ahead and serve it at a festive gathering too.

Pheki Mathri Recipe is a nostalgic one for me. It takes me back to train journeys from my childhood, which always invoke memories of two things - aloo poori and mathri-achar. The pheki (salt less) mathri crispy fried to perfection, is one of my favorite North Indian snacks specially when eaten with the Punjabi mango pickle. The texture of mathri is a classic - almost like savory flaky shortcrust. Crisp on the outside yet soft and flaky on the inside. Pheki Mathri Recipe would always be a part of our long train journeys but are also great to make ahead for festive celebrations like Karva Chauth and Diwali.

Guntur holds Asia’s largest chili market and you can get many chili varieties in Guntur and you will also find a Mirchi Bajji stall in almost every corner of the street. My very favorite Mirchi Bajji stall is on the main road of Brundavan Gardens. This stall opens from five in the evening and is open until 11 at night. Standing under the street light, devouring piping hot Mirchi Bajji with cut onions sprinkled with lemon and red chili powder is truly delicious. Here is a recipe of the Mirchi Bajji where I have tried to recreate the flavors and taste.
